
Due to undeserved travels, wedding party festivities for both Mamacita and the Mr., and sharing a laughable income between one diva and a student, I am, in a word, poor.
In an effort to save money, I have presented myself with a little challenge: Cooking good meals that cost under $10. So far, I’ve stayed under $5!
Last night I cooked really good Cuban Frijoles Negros (black beans) using this recipe. I paired it with rice and chicken. Sounds cheap right?
But wait! There’s more!
I got an entire rotisserie chicken for only $3.99 by taking advantage of the Sunday special at Harris Teeter.
According to my calculations, this meal cost under $4.00 per person! Hello new Sunday night tradition…until I make my millions, that is.
Any recommendations for cheap eats at home?!? So far I’m loving this challenge!
P.S. I also added a ton of jalapenos on top because I’m crazy like that :)
